Ingredients

  • 1 cup basmoti rice

  • 1 litter water

  • 1 tsp + 3 tbsp Oil

  • Salt to taste

  • 2 pcs eggs

  • 2 tbsp Onion (chopped)

  • 1 tsp garlic paste

  • 1 tsp ginger paste

  • 1 tbsp soya sauce

  • 1/2 tsp Black pepper powder

  • 1/2 cup Carrot (chopped)

  • 1/2 cup Broccoli (cut into small pieces)

  • 1 cup Cabbage (chopped)

  • 2 pcs Green chilies (sliced)

  • 1/4 cup Green onions (chopped)

Directions

  • Step 1:
    First, wash the rice well. Then, boil water in a pan and add 1 teaspoon of oil, a little salt, and the washed rice. When the rice is 80% cooked, drain the water and let the rice cool down. Cooling the rice will prevent it from sticking together when frying. Using cold rice is best.
  • Step 2:
    Break the eggs and beat them with a little salt. Heat 1 tablespoon of oil in a frying pan and scramble the eggs. Set the scrambled eggs aside.
  • Step 3:
    In the same frying pan, add 2 more tablespoons of oil. Add the chopped onion, garlic paste, ginger paste, and salt to taste. Fry for a while. Then add the soya sauce and black pepper powder and fry a bit more. Add the chopped carrots and broccoli, and fry for 2-3 minutes. Next, add the chopped cabbage and sliced green chilies, and fry for 1-2 minutes.
  • Step 4:
    Now, add the partially cooked rice, scrambled eggs, green onions, and salt to taste. Mix everything well. Cover the pan and let it steam for 10 minutes so that everything mixes well and the rice is fully cooked.
  • Step 5:
    Your healthy winter fried rice is ready. Garnish as you like and serve hot with sauce or salad.
