Crispy & Juicy Chicken Fry
A Personal Journey to the Perfect Chicken Fry. . .
Making chicken fry is something that brings back memories of family gatherings and weekend feasts at my home. The sizzling sound of marinated chicken hitting hot oil always fills me with a sense of anticipation. I remember the first time I tried making it—it was a blend of excitement and nerves. Would the chicken come out too dry? Would it be as crispy as my mother’s version? I was determined to get it just right.
The secret, I soon realized, wasn’t just in the ingredients but in patience. Letting the chicken soak in all the spices during the marinade process made a huge difference, turning an ordinary dish into something special. The combination of corn flour and rice flour gave it that perfect crunch, which made each bite a crispy delight. There’s something truly rewarding about watching simple ingredients transform into something so flavorful. Whether it’s for a family dinner or a quick snack, chicken fry has become one of my go-to comfort foods, and with each batch, I find myself refining the recipe, making it even better than before.

kcalIngredients
4 pcs chicken
1/4 cup milk
1 tbsp vinegar
1/2 tbsp soya sauce
1 tbsp garlic+ginger paste
2 tsp chili powder
1 tsp black pepper powder (1/2+1/2)
Salt to taste
1 cup flour
2 tbsp corn flour
1/2 tsp oregano
Oil for frying
Directions
- Step 1:
Wash and clean the chicken pieces thoroughly. In a large bowl, mix milk and vinegar. Add soya sauce, garlic paste, ginger paste, 1 teaspoon chili powder, ½ teaspoon black pepper powder, and salt to taste. Mix well, after that add the chicken pieces to the mixture. Let the chicken marinate for 1 hour. - Step 2:
In another bowl, mix flour, corn flour, 1 teaspoon chili powder, ½ teaspoon black pepper powder, oregano, and salt to taste. - Step 3:
Take one piece of chicken and coat it well in the prepared flour mixture. After coating, shake off the excess flour. Then, dip the chicken piece back into the marinated mixture and coat it again in the flour mixture. Repeat this same process for all the chicken pieces. - Step 4:
In a frying pan, heat oil over medium heat. Make sure the oil is not too hot, as it can burn the outside while leaving the inside uncooked. Once the oil is moderately hot, carefully drop in the marinated chicken pieces one by one. Fry each piece evenly for about 12-15 minutes, until the chicken turns golden brown. - Step 5:
Once the chicken is golden brown, remove it from the oil and serve hot. Enjoy with tomato sauce or any sauce of your choice.

Tips:
- Marinate for Longer: Marinating the chicken for 1-2 hours allows the spices to seep into the meat properly. Don’t rush this step for the best flavor.
Use Rice Flour for Extra Crispiness: Mixing rice flour with corn flour helps make the chicken extra crispy. This combination is ideal for a crunchy texture.
Maintain Proper Oil Temperature: If the oil is too hot, the chicken will burn on the outside and remain raw inside. Fry over medium heat to ensure even cooking.
